Thought I’d share this 2 ingredient recipe

Pumpkin Muffins

I found this on Pinterest and thought I”d share – I’ll be using it in my dutch oven / camping.  This lovely recipe is from the Big Red Kitchen.

There’s only two ingredients. That’s right, just the cake mix and the pumpkin (15 oz.). No oil, no eggs, no water, nothing else. The end result is an amazing, incredibly moist muffin/cupcake with a hint of pumpkin flavor. 
 
 
It felt kind of strange not to add any liquids to the mix but it came together nicely into a thick batter.
 
Bake at 350 degrees for 20-25 minutes. 
 
 
 
 
 
Add a dusting of powdered sugar, or better yet some homemade cream cheese frosting for added awesomeness.

Ocean City Maryland

Ocean City – what a fun trip.  Hot and humid, then raining like crazy – but they sure know how to eat good over there.

Crabbing, boating, waverunning – fun on the water most of the weekend.  Caught 4 dozen crabs over course of 4 days –

Family – fun – food –  hung out on boardwalk, ate crabs, and shopped. 

Secrets bar was a blast – 18 bars and a few bands – had a fireworks show

Great time

 

 

Sedona – Arizona

Got some bike riding in Sedona this weekend – was pretty humind and hot but if you get out early morning, spectacular!

– Bell Rock Trail was a good one – nice easy trail but had some shoot outs / single track that were FUN

Gooseberry Falls –  12 Miles Northeast of Two Harbors, Mn is known for its spectacular waterfalls, river gorge, Lake Superior shoreline, Civilian Conservation Corps log and stone structures, and north woods wildlife.
